Eating Up the Santa Fe Trail

A delightfully readable and informative book, Eating Up the Santa Fe Trail is filled with history and stories of the old west.   Below is a recipe from the book for Apple Pie without Apples, or “Mock Apple Pie”. ( page 63)

2 cups soda crackers

2 eggs

1 cup sugar or 1/2 cup honey

1 cup milk

1 teaspoon nutmeg

2 teaspoons cinnamon

1/2 lemon rind, grated

Double crusted pie shell 2 Tablespoons butter

 Apple Pie Without Apples, or Mock Apple Pie

Beat eggs and mix with soda crackers, sugar, milk, and spices. Fill pie shell. Grate lemon peel on top of filling and spread.  Dot with Butter. Cover with top crust, forking a few vents in the crust. Bake 40 minutes at 325 degrees F. (I found this recipe at Fort Robinson, Nebraska.  It was called Mock Apple Pie.  A variation of this recipe was published in the 1930’s by the Ritz Cracker Company, and for some years it again was a popular dessert.)
